STORY & INFORMATION

Cacao beans used in the making of Pure Kakaw’s Matagalpa are organically grown and farmed under agroforestry principles.

The farm itself is positioned in the mountains, surrounded by cloud forests with a high diversity of birds and animals.

After harvesting, fermenting and drying the beans, the cacao paste is produced on-site, stone ground. This is rare enough to emphasize on this complete end-to-end manufacturing process taking place where the trees grow, from bean to paste.

The whole is minimally processed in order to preserve the nutrients while unravelling subtle aromas.

Tasting notes

Aromas:

Coffee, roasted hazelnuts, and coconut notes deliciously unveil, accompanied by a hint of spices. A little tanginess appears from the second half of the cup, which offers unripe red or black fruit notes.

Remarks:

A full-bodied yet enjoyable taste which is punctuated by a slight fermented note in the aftertaste and a persistent grapefruit feel on the tip of your lips.

Effects experienced

Matagalpa feels  comforting.
Firstly because of its aromas. The chocolaty smell coupled to its coconut and coffee notes give it a specific warmth, inviting us to gently turn inward and be present for ourselves.

It doesn’t take long before the effects become tangible, after half a cup, although they always come up subtly. We start to feel an enjoyable heaviness in our heads, like a mattress absorbing the usual shocks of our thoughts. Our body is light yet our feet are rooted, inviting us to stay where we are, present.

Matagalpa is mostly inviting us to introspection and reconnection to self.
