CONTEXT & MAKING PROCESS
Maya Mountain Cacao (MMC) operates in the southern districts of Toledo and Stann Creek, working with more than 400 smallholder organic farms of one to five acres, nurturing cacao trees amidst hardwoods and fruit crops like banana, coconut, and mango.
Around three-quarters of these farms belong to Q’eqchi’ and Mopan Maya families, who have cultivated cacao for generations and continue to uphold this heritage through mixed agroforestry systems that sustain both biodiversity and household resilience.
Once harvested, fresh beans—or “wet cacao”—are directly collected by MMC. Handling beans while still in their mucilage allow them to control the delicate stages of fermentation and drying at their centralized facility. These steps, often too resource-intensive for individual farmers, are carried out with precision to unlock the full potential of flavor and avoid defective notes. Afterward, beans are hand-sorted, packed, and prepared for export to makers such as Herbal Cacao.
According to MMC, this model benefits farmers by relieving them of the most complex aspects of post-harvest processing while securing them added value for their crops. For MMC, it ensures scale, consistency, and the capacity to deliver cacao that has become a benchmark for fine flavor.

REMARKS
This cacao strikes with its remarkable harmony. It opens on bright, tangy-fruity notes before unfolding into a fuller body where nutty and cereal tones take the lead. The finish lingers with the softness of sweet black tea and a subtle sesame depth.
The texture is smooth and dense thanks to fine grinding, with almost no residue. No bitterness or off-notes appear, and the tannins are so well integrated that little to no dryness remains.
The result is a balanced, rounded profile that feels pure and consistent, even across repeated tastings.
Note: Only after tasting it several times did we discover that this cacao had not been roasted—a revelation that left us pleasantly surprised, given its depth and balance.

REMARKS
This cacao delivered a memorable contrast. Soon after finishing the cup, a light sense of elevation set in, marked by a clear dissociation between body and mind. Physically, we felt deeply relaxed, while mentally we remained sharp, steady, and engaged.
The result was a focused yet unhurried state—thoughts flowed with clarity, concentration deepened, and perception sharpened without any sense of heaviness.
Overall, this cacao encourages a slower pace while enhancing mental focus, making it a strong companion for settings that benefit from attentiveness and immersion—whether in creative work, social gatherings, or music-filled environments.
