Kaukawa Cacao is a Peruvian brand based in the province of La Convención, Cusco, where the entire process unfolds — from caring for the trees to transforming the beans into paste. This underscoring marks an important milestone as it is the first company to be featured in the Profiles while being entirely grounded in one of cacao’s historical homelands.

 

Through Kaukawa, founder Fiorella Richter advocates for a vision of cacao that goes beyond consumption: one that recognizes cacao as a sacred plant, protects native varieties, uplifts farmers as guardians of biodiversity, and fosters a regenerative relationship between the Earth, producers, and those who receive the cacao.

CONTEXT & MAKING PROCESS

Kaukawa Cacao is rooted in the Andean understanding of reciprocity between people, land, and spirit. Working almost exclusively with Chuncho cacao, Fiorella collaborates directly with independent farmers and cooperatives who cultivate and protect these native beans through agroforestry and regenerative practices.

 

Depending on the harvest and availability, Kaukawa sources cacao from farmers such as Sonia Valverde (see pictures below), Iris of the Machiguenga community, Miriam — a women cooperative leader — José Luis Perez from Conveca and his family, as well as the Alto Urubamba cooperative for larger volumes.

 

The cacao profiled here comes from Conveca and combines several Chuncho cultivars, mainly Chuncho de montaña & Pamuco, giving it a deeper nutty profile compared to the brighter fruit-forward expressions often associated with Chuncho señoritas.

 

Grown between 700 and 1000 meters altitude, Chuncho cacao thrives in biodiverse systems with minimal shade. Harvested in December 2025, the beans were fermented in wooden boxes for 4 to 5 days to preserve the delicate nature of the cultivars, then sun-dried for around a week. In this case, the entire process happens on the farm itself — truly tree-to-bar.

 

Once dried, the cacao is roasted gently at temperatures below 90°C for around 30 minutes, preserving both its active compounds and its natural aromatic complexity.

 

Beyond technique, Kaukawa also honors the energetic dimension of cacao: each finished batch is blessed through a prayer inspired by the teachings of the Q’ero Nation of Cusco, continuing a lineage of gratitude and intention carried through the entire journey of the cacao.

REMARKS

This cacao presents an overall nutty profile, opening with dominant pecan nut notes and a light astringent sensation. Throughout the tasting, subtle lactic and butyric notes remain present in the background, contributing a creamy and slightly fermented character.

 

As the cup evolves, the profile develops toward browned fruits, especially dried figs, which progressively shift into darker plum notes. Toward the end of the tasting, roasted and green cacao nib notes become increasingly pronounced, giving the finish more intensity and structure. The lactic character also becomes more noticeable in the aftertaste, reminiscent of aged Comté cheese.

 

Overall, the profile builds progressively in intensity from beginning to end, moving from soft nutty notes toward deeper roasted and fermented characteristics.

REMARKS

This cacao begins with a light stimulating buzz that first appears in the head before progressively extending through the whole body. Very quickly, it creates a grounded sensation and naturally encourages slowing down, inviting us to step back and focus on one thing at a time.

 

The effect unfolds progressively and gains significant intensity over time. As the experience deepens, the perception of time becomes less defined, while the sensation gradually shifts from the head toward the chest area. By the end, strong and deep heartbeats become particularly noticeable, giving the experience a distinctly physical and centered dimension.
